What it is

L-ergothioneine is a water-soluble compound that belongs to the amino acid family. It was first discovered in 1909, in ergot fungus, which is where the name comes from. Chemically it is a stable molecule, C9H15N3O2S, that holds up well in water, which is why it is happy living in a can of EVER.

Where it comes from

You get it from your diet, mostly from mushrooms. Shiitake, oyster and king oyster are among the richest sources. Humans do not make it themselves, so every bit you have came from something you ate. Most everyday diets contain only small amounts.

Why your body pays attention

Here is the genuinely interesting part. Your body has a dedicated transporter, a specific doorway built to carry L-ergothioneine into your cells and hold onto it. Scientists gave it a name, OCTN1. Most compounds in food do not get their own transporter. Researchers find that unusual, and it is one reason the molecule has attracted so much scientific curiosity.
